Ingredients

  • 1 cup Almond flour
  • 1 cup Whole wheat flour
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 0.5 cup Whey protein powder (vanilla flavored)
  • 0.5 cup Unsalted butter, softened
  • 0.5 cup Brown sugar
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Milk
  • 0.5 cup Mini chocolate chips (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Step 2

In a medium bowl, whisk together almond flour, whole wheat flour, baking powder, salt, and whey protein powder until well combined. Set aside.

Step 3

In a large mixing bowl, cream the softened butter and brown sugar together until light and fluffy, about 3 minutes.

Step 4

Beat in the egg and vanilla extract until fully incorporated.

Step 5

Gradually mix in the dry ingredients in three parts, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined. If using, gently fold in mini chocolate chips.

Step 6

Form the dough into a ball, then roll out on a lightly floured surface to about 1/4 inch thickness.

Step 7

Using alphabet cookie cutters, cut out letters and place them onto the prepared baking sheets, leaving an inch of space between each cookie.

Step 8

Gather the scraps, reroll, and cut out more alphabet cookies.

Step 9

Bake in preheated oven for 10-12 minutes, or until the edges are lightly golden brown.

Allow cookies to cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.
