Ingredients

  • 4 cups Kale leaves
  • 2 cups Romaine lettuce
  • 1 cup Red cabbage
  • 1 large Carrot
  • 1 medium Cucumber
  • 1 cup Cherry tomatoes
  • 1 cup Cooked quinoa
  • 1 cup Chickpeas (cooked or canned, drained and rinsed)
  • 1 medium Avocado
  • 2 tablespoons Sunflower seeds
  • 2 tablespoons Pumpkin seeds
  • 3 tablespoons Olive oil
  • 2 tablespoons Lemon juice
  • 1 teaspoon Honey (optional)
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Wash and thoroughly dry the kale and romaine lettuce. Tear them into bite-sized pieces and place them in a large salad bowl.

Step 2

Thinly slice the red cabbage and add it to the bowl.

Step 3

Peel and julienne the carrot, then thinly slice the cucumber. Add both to the salad bowl.

Halve the cherry tomatoes and toss them into the mix.
