Ingredients

  • 1 cup Natural peanut butter (creamy or chunky)
  • 0.5 cup Granulated sugar
  • 0.5 cup Brown sugar, packed
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 0.5 cup Gluten-free all-purpose flour

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone baking mats.

Step 2

In a medium bowl, combine the peanut butter, granulated sugar, and brown sugar. Mix until smooth and well combined.

Step 3

Add the egg and vanilla extract to the bowl, and stir until fully incorporated.

Step 4

Sprinkle the baking soda, salt, and gluten-free all-purpose flour over the wet mixture. Gently fold the dry ingredients into the wet ingredients until a cohesive dough forms.

Step 5

Using a tablespoon or cookie scoop, portion out the dough into 1-inch balls and place them on the prepared baking sheets, leaving about 2 inches of space between each cookie.

Step 6

Flatten each ball gently with a fork in a crisscross pattern.

Step 7

Bake in the preheated oven for 7–9 minutes, or until the edges just start to set and turn golden. Do not overbake, as the cookies will firm up as they cool.

Step 8

Remove the baking sheets from the oven and let the cookies cool on the trays for 5 minutes. Then, transfer them to a wire rack to cool completely.

Step 9

Store leftovers in an airtight container at room temperature for up to 5 days.
