Ingredients

  • 4 large Eggs
  • 2 cups Fresh spinach

  • 4 pieces Large whole wheat tortillas
  • 2 tablespoons Olive oil
  • 2 tablespoons Milk
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper

Directions

Step 1

In a medium-sized bowl, crack the eggs and whisk them together with the milk, salt, and black pepper until well combined. Set aside.

Step 2

Heat 1 tablespoon of olive oil in a large non-stick skillet over medium heat. Add the spinach and sauté for 2-3 minutes until wilted. Remove the spinach from the skillet and set aside.
