  • 0.5 cups Unsweetened applesauce

  • 0.25 cups Brown sugar (packed)
  • 1 teaspoons Vanilla extract
  • 2 large Egg whites
  • 0.5 cups Mini semi-sweet chocolate chips
  • 0 as needed Cooking spray

Directions

Step 1

Preheat your oven to 375°F (190°C). Line two baking sheets with parchment paper or lightly spray them with nonstick cooking spray.

Step 2

In a medium mixing bowl, whisk together the flour, baking soda, and salt. Set aside.

Step 3

In a large mixing bowl, combine the light butter, applesauce, granulated sugar, and brown sugar. Beat with a hand mixer or stand mixer until the mixture is smooth and creamy.

Step 4

Add the vanilla extract and egg whites to the wet mixture, and continue to mix until fully incorporated.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined. Be careful not to overmix.

Step 6

Fold in the mini chocolate chips using a spatula until evenly distributed throughout the dough.

Step 7

Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.

Step 8

Bake in the preheated oven for 8-10 minutes, or until the edges are lightly golden and the centers look just set. Avoid overbaking for soft cookies.

Step 9

Remove from the oven and let the cookies cool on the baking sheets for 2 minutes. Then transfer to a wire rack to cool completely.

Step 10

Store any leftovers in an airtight container at room temperature for up to 4 days. Enjoy your WW-friendly chocolate chip softies!
