Ingredients

  • 8 oz Shrimp, peeled and deveined
  • 2 cups Coleslaw mix (shredded cabbage and carrots)
  • 1 tbsp Soy sauce, low-sodium
  • 2 cloves Garlic, minced
  • 1 tsp Ginger, freshly grated
  • 2 Green onions, finely chopped
  • 6 Egg roll wrappers
  • 1 Egg, beaten (for sealing wrappers)
  • 1 as needed Cooking spray
  • 2 tbsp Sweet chili dipping sauce (optional)

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly coat with cooking spray.

Step 2

Finely chop the shrimp into small pieces. In a large skillet, spray a bit of cooking spray and heat over medium heat.

Step 3

Add the minced garlic and grated ginger to the skillet and sauté until fragrant, about 30 seconds.

Add the chopped shrimp to the skillet and cook until opaque, about 2–3 minutes.
