Ingredients

  • 8 oz Ground chicken (98% lean)
  • 12 pieces Wonton wrappers
  • 2 tbsp Soy sauce (low sodium)
  • 1 tbsp Hoisin sauce
  • 1 tbsp Rice vinegar
  • 2 cups Coleslaw mix (shredded cabbage and carrots)
  • 2 tbsp Cilantro (chopped)
  • 2 stalks Green onions (sliced thinly)
  • 1 tsp Minced garlic
  • 1 tsp Ginger (grated)
  • 0.5 tsp Sesame oil (optional for flavor)
  • 1 tbsp Nonstick cooking spray

Directions

Step 1

Preheat your oven to 375°F (190°C). Spray a standard muffin tin with nonstick cooking spray.

Step 2

Take the wonton wrappers and gently press them into the muffin tin wells to create taco cups. Spray the tops lightly with cooking spray. Bake for 6–8 minutes, or until the edges are golden and crispy. Remove from the oven and set aside.

Step 3

In a large skillet, spray a bit of nonstick cooking spray and heat over medium heat. Add the minced garlic and grated ginger, cooking for about 30 seconds until aromatic.

Step 4

Add the ground chicken to the skillet, breaking it into small crumbles with a spatula. Cook for 5–7 minutes, or until no longer pink. Stir in 1 tablespoon of soy sauce and the hoisin sauce. Cook for another 1–2 minutes, ensuring everything is well combined. Remove from heat and keep warm.

Step 5

In a medium-sized bowl, combine the coleslaw mix, chopped cilantro, sliced green onions, remaining 1 tablespoon of soy sauce, rice vinegar, and sesame oil (if using). Toss until evenly coated.

Step 6

Spoon equal portions of the cooked chicken mixture into the baked wonton cups. Top each taco with a generous amount of the coleslaw mixture.

Step 7

Serve immediately and enjoy your delicious, crispy sassy wonton tacos!
