Ingredients

  • 30 ounces Canned black beans
  • 1 cup Peach salsa (low-sugar or sugar-free)
  • 2 cups Vegetable broth (low-sodium)
  • 0.5 cup Chopped onion
  • 1 teaspoon Minced garlic
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Chili powder
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Lime juice
  • 2 tablespoons Fresh cilantro (for garnish)
  • 2 tablespoons Nonfat Greek yogurt (optional, for topping)

Directions

Step 1

Drain and rinse the canned black beans thoroughly in a colander to remove excess sodium.

Step 2

In a large pot, heat a splash of water or a small amount of oil spray over medium heat. Add the chopped onion and cook for 3-4 minutes until softened.

Step 3

Add the minced garlic, ground cumin, and chili powder to the pot. Stir and cook for 1 minute until the spices are fragrant.

Step 4

Stir in the black beans, peach salsa, and vegetable broth. Mix well to combine.

Step 5

Bring the soup to a boil, then reduce the heat to low and let it simmer for 15 minutes to allow the flavors to meld together.

Step 6

Using an immersion blender, partially blend the soup to achieve a creamy texture while still leaving some chunks of beans for texture. If you don't have an immersion blender, transfer half of the soup to a blender, blend until smooth, and then return it to the pot.

Step 7

Season the soup with salt, pepper, and lime juice to taste. Stir well.

Step 8

Serve the soup warm in bowls. Garnish each bowl with fresh cilantro and a dollop of nonfat Greek yogurt, if desired.
