Ingredients

  • 8 oz Boneless, skinless chicken breast
  • 1.5 cups Low-sodium chicken broth
  • 1.5 cups Frozen mixed vegetables (carrots, peas, corn, green beans)
  • 10.5 oz (1 can) Fat-free cream of chicken soup (condensed)
  • 0.5 tsp Garlic powder
  • 0.5 tsp Onion powder
  • 0.25 tsp Black pepper
  • 8 oz (1 tube) Reduced-fat crescent roll dough
  • 1 spray Cooking spray

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Spray a medium-sized skillet with cooking spray and heat over medium heat.

Step 3

Cook the chicken breast until fully cooked, about 5-7 minutes on each side. Remove from the skillet and shred or chop into small pieces.

Step 4

In a large mixing bowl, combine the shredded chicken, chicken broth, frozen mixed vegetables, cream of chicken soup, garlic powder, onion powder, and black pepper. Mix thoroughly.

Step 5

Spray an 8x8-inch baking dish or pie dish with cooking spray, and pour the chicken mixture evenly into the dish.

Step 6

Unroll the crescent roll dough and carefully stretch it over the top of the chicken mixture to form a crust, pinching together any seams. Trim off any excess dough if necessary.

Step 7

Place the dish in the preheated oven and bake for 20-25 minutes, or until the crescent dough is golden brown and cooked through.

Step 8

Remove the dish from the oven and let it sit for 5 minutes before serving. Cut into 4 equal portions. Enjoy your lightened-up chicken pot pie!
