Ingredients

  • 2 medium Potatoes (Yukon Gold or Russet)
  • 0.25 cup Unsweetened almond milk
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Ground black pepper
  • 0.5 cup Frozen corn kernels
  • 6 ounces Boneless, skinless chicken breast
  • 0.25 cup Panko breadcrumbs
  • 1 Egg white
  • 0 Cooking spray
  • 2 teaspoons Brown gravy mix (low-sodium)
  • 0.25 cup Water

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly coat it with cooking spray.

Step 2

Peel and cube the potatoes. Place them in a medium saucepan and cover with water. Bring to a boil and cook until the potatoes are fork-tender (around 10-12 minutes).

Step 3

While the potatoes cook, prepare the chicken. Cut the chicken breast into bite-sized pieces. Set up a dredging station with the egg white in one bowl and the panko breadcrumbs in another.

Step 4

Dip each chicken piece into the egg white, then coat with panko breadcrumbs. Place the breaded chicken pieces onto the prepared baking sheet.

Step 5

Lightly spray the chicken pieces with cooking spray and bake for 10-12 minutes, flipping halfway through, until golden brown and cooked through.

Step 6

Microwave the frozen corn for 1-2 minutes, or until heated through. Set aside.

Step 7

In a small bowl, whisk together the brown gravy mix and water until smooth. Microwave the mixture for 30 seconds at a time, stirring between intervals, until thickened (approximately 1 minute total).

Step 8

Once the potatoes are cooked, drain them and mash them with the almond milk, salt, and pepper until smooth.

Step 9

Assemble the bowl: Start with the mashed potatoes as the base. Top with the baked chicken, cooked corn, and drizzle with the prepared gravy.

Step 10

Serve immediately and enjoy this guilt-free comfort meal!
