  • 1 Small onion, diced
  • 2 cloves Garlic, minced
  • 14 ounces Canned diced tomatoes with green chilies
  • 15 ounces Canned black beans, drained and rinsed
  • 8.5 ounces Canned corn kernels, drained
  • 1 tablespoon Chili powder
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Salt
  • 0.5 cup Yellow cornmeal
  • 0.25 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 0.5 cup Skim milk
  • 1 large Egg
  • 0.5 cup Shredded reduced-fat cheddar cheese
  • 1 as needed Cooking spray

Directions

Step 1

Preheat the oven to 375°F (190°C) and lightly spray an 8x8-inch baking dish with cooking spray.

Step 2

Heat a large skillet over medium heat and spray with cooking spray. Add the lean ground turkey and cook for 5-7 minutes, breaking it up as it browns.

Step 3

Add the diced onion and minced garlic to the skillet with the turkey, cooking for another 3 minutes until softened.

Step 4

Stir in the canned diced tomatoes with green chilies, black beans, and corn. Season with chili powder, cumin, and salt. Simmer for 5 minutes to let the flavors marry. Remove from heat.

Step 5

In a mixing bowl, combine the cornmeal, flour, and baking powder. Stir in the skim milk and the egg until a smooth batter forms.

Step 6

Transfer the cooked turkey mixture to the prepared baking dish and spread it out evenly.

Step 7

Pour the cornmeal batter over the turkey mixture and spread it to cover evenly.

Step 8

Sprinkle shredded reduced-fat cheddar cheese on top of the batter.

Step 9

Bake in the preheated oven for 20-25 minutes, or until the cornbread topping is golden brown and cooked through.

Step 10

Remove from oven and let stand for 5 minutes before slicing and serving. Enjoy your delicious and healthy hot tamale pie!
