Ingredients

  • 1.5 cups Old-fashioned oats
  • 2 medium Mashed bananas (ripe)
  • 2 large Egg whites
  • 0.25 cup Unsweetened applesauce
  • 1 tablespoon Honey
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Ground cinnamon
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 2 tablespoons Mini semisweet chocolate chips
  • 2 tablespoons Chopped walnuts (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.

Step 2

In a large mixing bowl, mash the bananas thoroughly until smooth. Add the egg whites, unsweetened applesauce, honey, and vanilla extract, and whisk until well combined.

Step 3

In a separate bowl, mix together the oats, ground cinnamon, baking powder, and salt.

Step 4

Gradually fold the dry ingredients into the wet ingredients and mix until fully combined.

Step 5

Gently stir in the mini chocolate chips and chopped walnuts, if using.

Step 6

Using a tablespoon or cookie scoop, drop rounded spoonfuls of the dough onto the prepared baking sheet, spacing them about an inch apart. Flatten slightly with the back of a spoon as these cookies won't spread much during baking.

Step 7

Bake in the preheated oven for 20-25 minutes, or until the cookies are golden brown and set.

Step 8

Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Step 9

Store in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week.
