Ingredients

  • 8 oz Lump crab meat
  • 2 large Egg whites
  • 0.5 cup Plain panko breadcrumbs
  • 2 tbsp Light mayonnaise
  • 1 tsp Dijon mustard
  • 1 tbsp Lemon juice
  • 1 tbsp Fresh parsley (chopped)
  • 0.5 tsp Old Bay seasoning
  • 0.25 tsp Black pepper
  • 1 tbsp Olive oil (for pan-frying)
  • 0 Nonstick cooking spray

Directions

Step 1

In a large mixing bowl, gently combine the crab meat, egg whites, panko breadcrumbs, light mayonnaise, Dijon mustard, lemon juice, chopped parsley, Old Bay seasoning, and black pepper.

Step 2

Form the mixture into 4 evenly sized patties, about 3 inches wide each. Be careful not to overpack the mixture to ensure tender, light crab cakes.

Step 3

Heat the olive oil in a nonstick skillet over medium heat. Lightly coat the pan with nonstick cooking spray to prevent sticking.

Step 4

Once the oil is hot, place the crab cakes in the skillet, being careful not to overcrowd. Cook for about 4-5 minutes on each side until golden brown and heated through.

Step 5

Remove the crab cakes from the skillet and transfer them to a plate lined with paper towels to soak up any excess oil.

Step 6

Serve warm with an additional squeeze of lemon on top or your favorite low-calorie dipping sauce.
