  • 4 large Russet potatoes
  • 1 large Granny Smith apple
  • 4 tablespoons Unsalted butter
  • 1 cup Heavy cream
  • 2 tablespoons Fresh parsley
  • 1 tablespoon Fresh thyme leaves
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 8 cups Water

Directions

Step 1

Peel the potatoes and cut them into 1-inch cubes for even cooking. Set them aside in a bowl of cold water to prevent browning.

Step 2

Peel, core, and chop the Granny Smith apple into small cubes. Set aside.

Step 3

Bring 8 cups of water to a boil in a large pot. Add the potato cubes and a pinch of salt, then reduce to a simmer and cook for 15-20 minutes, or until the potatoes are fork-tender.

Step 4

While the potatoes are cooking, heat 1 tablespoon of butter in a small skillet over medium heat. Add the chopped apple and cook for 5-7 minutes, stirring occasionally, until the apple pieces are soft and slightly caramelized. Remove from heat.
