Ingredients

  • 4 medium zucchini
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced

  • 1 tablespoon lemon juice
  • 0.5 teaspoons red pepper flakes
  • 0.5 teaspoons salt
  • 0.25 teaspoons ground black pepper
  • 0.25 cups Parmesan cheese, grated (optional)

Directions

Step 1

Wash the zucchinis thoroughly under cold water and pat dry with a kitchen towel.

Step 2

Using a spiralizer, create zucchini noodles (also called 'zoodles') by processing all 4 zucchinis. If you don’t have a spiralizer, use a julienne peeler or a vegetable peeler to cut the zucchini into thin strips.

Step 3

Place the zucchini spirals in a colander and sprinkle with a pinch of salt. Let them sit for 10 minutes to remove excess moisture. Afterward, gently pat the zoodles dry with a paper towel.

In a large skillet, heat the olive oil over medium heat.
