Ingredients

  • 1.25 cups Warm water
  • 2 tablespoons Honey
  • 1 packet Active dry yeast
  • 2 cups Whole wheat flour
  • 1.5 cups All-purpose flour
  • 1.5 teaspoons Salt
  • 2 tablespoons Olive oil
  • 1 tablespoon Fresh rosemary (chopped)
  • 1 tablespoon Fresh thyme (chopped)
  • 1 tablespoon Fresh parsley (chopped)
  • 1 whole Optional: Egg (for egg wash)
  • 1 teaspoon Optional: Water (for egg wash)

Directions

Step 1

In a large mixing bowl, combine the warm water and honey. Sprinkle the yeast over the top, and let it sit for 5-10 minutes until frothy.

Step 2

Add the olive oil, salt, chopped herbs, and 2 cups of whole wheat flour. Stir with a wooden spoon until combined.

Step 3

Gradually add the all-purpose flour, 1/2 cup at a time, until the dough comes together and is slightly sticky but manageable.

Step 4

Turn the dough out onto a floured surface and knead for about 8-10 minutes, or until the dough becomes smooth and elastic. Alternatively, use a stand mixer with a dough hook for about 5-6 minutes.

Step 5

Lightly oil a large bowl and place the dough inside, turning it to coat in oil. Cover with a damp towel or plastic wrap, and let it rise in a warm place for 1 to 1.5 hours, or until doubled in size.

Step 6

Punch down the dough to release the air. Shape into a loaf or divide into 12 equal pieces for rolls.

Step 7

If making a loaf, place the dough in a greased 9x5-inch loaf pan. For rolls, shape each piece into a ball and arrange them on a greased baking sheet or in a greased 9x13-inch pan.

Step 8

Cover with a damp towel or plastic wrap and let rise again for 30-40 minutes, or until puffy.

Step 9

Preheat your oven to 375°F (190°C). If desired, prepare an egg wash by whisking together the egg and water, then brushing over the top of the loaf or rolls for a golden, shiny finish.

Step 10

Bake in the preheated oven for 20-25 minutes for rolls, or 25-30 minutes for a loaf, until the tops are golden brown and the bread sounds hollow when tapped on the bottom.

Step 11

Remove from the oven and let cool on a wire rack before slicing or serving. Enjoy your delicious herbed whole grain bread or rolls!
