  • 1 cup panko breadcrumbs
  • 2 teaspoons dried herbs (such as thyme, oregano, and parsley)
  • 2 tablespoons olive oil
  • 6 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, thinly sliced
  • 0.25 cup red onion, thinly sliced
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon honey
  • 1 teaspoon dijon mustard
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

Slice the goat cheese log into 8 equal rounds, about 1/2 inch thick.

Step 3

In a shallow dish, combine the panko breadcrumbs and dried herbs.

Step 4

Press each goat cheese slice into the breadcrumb mixture, coating both sides evenly. Place the coated cheese rounds on a plate.

Step 7

In a large bowl, toss the mixed salad greens, cherry tomatoes, cucumber, and red onion.

Step 8

In a small bowl, whisk together the balsamic vinegar, honey, Dijon mustard, 1 tablespoon olive oil, salt, and black pepper to make the dressing.

Step 9

Pour the dressing over the salad and toss gently to coat the vegetables.

Step 10

Divide the salad among four plates. Top each with two warm goat cheese rounds.

Step 11
