Ingredients

  • 1 pound ground turkey
  • 2 medium zucchini
  • 2 tablespoons olive oil
  • 1 small yellow onion
  • 3 cloves garlic cloves
  • 2 tablespoons fresh parsley
  • 1 teaspoon fresh thyme
  • 0.5 teaspoons ground black pepper
  • 0.75 teaspoons salt
  • 0.25 teaspoons crushed red pepper flakes
  • 1 tablespoon lemon juice
  • 1 cup cherry tomatoes
  • 0.25 cup shredded Parmesan cheese (optional)

Directions

Step 1

Wash and pat dry the zucchini. Cut into thin rounds and set aside.

Step 2

Dice the yellow onion and mince the garlic cloves. Chop the fresh parsley.

Step 3

Heat 2 tablespoons of olive oil in a large skillet over medium heat.

Step 4

Add the diced onion to the skillet and sauté for 2–3 minutes until translucent.

Step 5

Add the minced garlic and cook for an additional minute, stirring frequently to avoid burning.

Step 6

Increase the heat slightly and add the ground turkey to the skillet. Break it up with a wooden spoon and cook for 5–7 minutes or until browned and fully cooked through.

Step 7

Stir in the zucchini rounds and cook for 4–5 minutes, stirring occasionally, until they begin to soften.

Step 8

Season the mixture with salt, ground black pepper, fresh thyme, and crushed red pepper flakes. Mix thoroughly to coat the ingredients with the herbs and spices.

Step 9

Add the cherry tomatoes to the skillet and cook for another 2 minutes until they begin to soften and release their juices.

Step 10

Remove the skillet from heat and stir in the fresh parsley and lemon juice for a bright, fresh flavor.

Step 11

Taste and adjust seasoning as needed.

Step 12

Optional: Sprinkle shredded Parmesan cheese over the skillet before serving for added richness.

Step 13

Serve warm as a standalone dish or pair with your favorite grain or crusty bread.
