Ingredients

  • 2 pieces whole trout
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 pieces garlic cloves (minced)
  • 2 tablespoons fresh parsley (chopped)
  • 1 tablespoon fresh thyme (chopped)
  • 4 tablespoons unsalted butter
  • 3 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1 tablespoon capers (optional)
  • 4 pieces lemon slices (optional)

Directions

Step 1

Rinse the whole trout under cold water and pat them dry using paper towels.

Step 2

Season the inside and outside of each trout with salt and black pepper. Stuff the cavity of each fish with half of the chopped parsley and thyme.

Step 3

Heat the olive oil in a large skillet over medium heat.

Step 4

Once the oil is hot, place the trout in the skillet and cook for about 4-5 minutes on each side, or until the skin is golden and crispy and the flesh flakes easily with a fork.

Step 5

Remove the cooked trout from the skillet and set them on a warm plate. Keep them covered while you prepare the lemon butter sauce.

Step 6

In the same skillet, reduce the heat to low and add the unsalted butter. Let it melt completely while stirring gently.

Step 7

Add the minced garlic and cook for 30 seconds, or until fragrant (be careful not to burn it).

Step 8

Stir in the lemon juice, lemon zest, and capers (if using). Cook for 1-2 minutes, allowing the flavors to meld together.

Step 9

Pour the lemon butter sauce over the cooked trout and garnish with fresh parsley and optional lemon slices.

Step 10

Serve immediately with your choice of side dishes, such as roasted vegetables or rice.
