Ingredients

  • 1 cup long-grain white rice
  • 2 cups water
  • 0.5 teaspoon salt
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 0.5 cup currants
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon fresh thyme, leaves
  • 2 cloves garlic, minced
  • 0.25 teaspoon black pepper
  • 1 teaspoon lemon zest

Directions

Step 1

Rinse the rice under cold water until the water runs clear to remove excess starch.

Step 2

In a medium saucepan, bring 2 cups of water and 0.5 teaspoon of salt to a boil.

Add the rinsed rice to the boiling water, reduce the heat to low, cover, and simmer for 15 minutes or until the rice is tender and all the water is absorbed.
