Ingredients

  • 4 tablespoons Unsalted butter
  • 2 tablespoons All-purpose flour
  • 1.5 cups Whole milk
  • 0.125 teaspoons Nutmeg, freshly grated
  • 1 teaspoons Salt
  • 0.5 teaspoons Freshly ground black pepper
  • 2 cups Gruyere cheese, grated
  • 8 slices Loaf of rustic white bread, sliced thickly
  • 4 tablespoons Dijon mustard
  • 8 slices Prosciutto, thinly sliced
  • 1 teaspoons Fresh thyme, chopped
  • 1 tablespoons Fresh parsley, chopped
  • 0.5 cups Shredded Gruyere for topping

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a medium saucepan, melt 2 tablespoons of butter over medium heat. Once melted, whisk in the flour to create a roux and cook for 1 minute.

Step 3

Gradually pour in the milk, whisking constantly to avoid lumps. Cook for 2-3 minutes until the sauce thickens.

Step 4

Season the sauce with nutmeg, salt, and pepper. Remove from the heat and stir in 1/2 cup of grated Gruyere until melted. Set aside. This is your Mornay sauce.

Step 5

Lay out the slices of bread. Spread 1/2 tablespoon of Dijon mustard on one side of 4 slices of bread.

Step 6

On top of the mustard-covered slices, layer 2 slices of prosciutto, a sprinkle of thyme, parsley, and 1/4 cup of grated Gruyere. Top with another slice of bread to form a sandwich.

Step 7

Heat a large skillet over medium heat. Melt 1 tablespoon of butter in the pan and grill the sandwiches in batches for 2-3 minutes per side, until they are golden brown. Add more butter as needed for subsequent batches.

Step 8

Transfer the grilled sandwiches to a baking sheet lined with parchment paper.

Step 9

Ladle a generous amount of Mornay sauce over each sandwich and sprinkle with additional Gruyere cheese.

Step 10

Bake in the preheated oven for 10-12 minutes, or until the tops are bubbly and golden brown.

Step 11

Remove from the oven and let cool slightly before serving.
