Ingredients

  • 1 lb pork tenderloin
  • 1 tbsp fresh thyme leaves
  • 1 tbsp fresh rosemary leaves

  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 0.5 cup chicken stock
  • 2 tbsp parsley for garnish

Directions

Step 1

Trim the pork tenderloin of any silver skin and cut it into 1-inch thick medallions.

Step 2

Lightly press each medallion to flatten it slightly using your palm or the side of a knife.

Step 3

In a small bowl, mix together the thyme, rosemary, salt, and black pepper.

Step 4

Season both sides of the pork medallions with the herb mixture.

Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.
