Ingredients

  • 2 medium Russet potatoes
  • 0.5 cup Grated Parmesan cheese
  • 2 tablespoons Fresh parsley
  • 0.5 teaspoon Garlic powder
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Ground black pepper
  • 24 pieces Won ton wrappers
  • 1 large Egg
  • 2 cups Vegetable oil (for frying)
  • 2 tablespoons Water

Directions

Step 1

Peel and dice the russet potatoes. In a medium pot, add the diced potatoes and enough water to cover them. Bring to a boil and cook until tender, about 10-12 minutes. Drain and mash the potatoes.

Step 2

In a mixing bowl, combine the mashed potatoes, grated Parmesan, chopped parsley, garlic powder, salt, and black pepper. Stir until well mixed. Set the filling aside.

Step 3

In a small bowl, whisk the egg with 2 tablespoons of water to create an egg wash.

Lay out a won ton wrapper on a clean surface. Place about 1 teaspoon of the potato filling in the center of the wrapper. Brush the edges of the wrapper lightly with the egg wash.

Fold the won ton wrapper diagonally to form a triangle, pressing the edges together to seal. If desired, fold in the two bottom corners toward the center to create a decorative shape. Repeat with the remaining wrappers and filling.

Using a slotted spoon, remove the cooked won tons and transfer them to a plate lined with paper towels to drain excess oil.
