Ingredients

  • 1 cup brown or green lentils
  • 3 cups vegetable broth
  • 2 tablespoons olive oil

  • 1 large carrot, diced
  • 1 large celery stalk, diced
  • 3 cloves garlic cloves, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 2 cups baby spinach leaves
  • 1 cup breadcrumbs
  • 0.5 cup parmesan cheese, grated (optional)
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Rinse the lentils thoroughly under cold water, then place them in a saucepan with the vegetable broth. Bring to a boil, reduce the heat to low, cover, and simmer for 20-25 minutes, or until the lentils are tender. Drain any excess broth if necessary.

While the lentils cook, heat the olive oil in a large skillet over medium heat. Add the diced onion, carrot, and celery, and sauté for 5-7 minutes, or until the vegetables are softened.
