  • 1 medium Cucumber, sliced into half-moons
  • 0.75 cup Kalamata olives, pitted and halved
  • 0.5 medium Red onion, thinly sliced
  • 0.5 cup Feta cheese, crumbled
  • 2 tablespoons Fresh parsley, chopped
  • 2 tablespoons Fresh dill, chopped
  • 0.5 cup Greek yogurt
  • 2 tablespoons Red wine vinegar
  • 1 teaspoon Dijon mustard

Directions

Step 1

In a small bowl, whisk together 2 tablespoons of olive oil, minced garlic, 1 tablespoon of lemon juice, dried oregano, salt, and black pepper. Pour this marinade over the chicken breasts in a shallow dish. Allow the chicken to marinate for 15 minutes while you prepare the salad ingredients.
