Ingredients

  • 225 grams Goat cheese
  • 60 grams Cream cheese (softened)
  • 2 tablespoons Fresh chives (chopped)
  • 2 tablespoons Fresh parsley (chopped)
  • 1 tablespoon Fresh dill (chopped)
  • 1 teaspoon Lemon zest
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Freshly ground black pepper
  • 12 slices Slices of white or whole wheat sandwich bread (crusts removed)
  • 1 medium Cucumber (thinly sliced)
  • 1 cup Microgreens or arugula

Directions

Step 1

In a medium mixing bowl, combine the goat cheese, cream cheese, chives, parsley, dill, lemon zest, salt, and black pepper. Mix well until smooth and evenly incorporated.

Step 2

Lay out the slices of bread on a clean work surface. Spread a generous layer of the herbed goat cheese mixture onto each slice of bread.

Step 3

On half of the bread slices, layer thin slices of cucumber. Top with a sprinkle of microgreens or arugula for added freshness.

Place the remaining slices of bread, herbed goat cheese side down, over the cucumber and microgreens to form sandwiches.
