  • 1 small, diced Onion
  • 1 small, diced Red bell pepper

Directions

Step 1

Wash, peel (optional), and dice the russet potatoes into small, evenly sized cubes (about 1/2 inch).

Bring a large pot of water to a boil and add a pinch of salt. Blanch the diced potatoes for 5 minutes until slightly tender but not fully cooked. Drain and set aside.
