Ingredients

  • 4 pieces Chicken breasts, boneless and skinless
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper, freshly ground
  • 0.5 cup All-purpose flour
  • 2 tablespoons Olive oil
  • 3 tablespoons Butter, unsalted
  • 2 cloves Garlic, minced
  • 0.75 cup Chicken broth
  • 0.25 cup Dry white wine
  • 0.25 cup Lemon juice, freshly squeezed
  • 2 tablespoons Capers, drained and rinsed
  • 2 tablespoons Parsley, fresh and chopped
  • 1 teaspoon Thyme, fresh and chopped
  • 4 slices Lemon slices, for garnish

Directions

Step 1

Place each chicken breast between two pieces of plastic wrap and pound with a meat mallet until about 1/2 inch thick. Season both sides with salt and pepper.

Step 2

Dredge the chicken breasts in the flour, shaking off any excess.

Step 3

In a large skillet, heat olive oil and 1 tablespoon of the butter over medium-high heat.

Step 4

Add the chicken to the skillet and cook for 3-4 minutes on each side, until golden brown and cooked through. Transfer chicken to a plate and set aside.

Step 5

Lower the heat to medium and add the remaining butter to the skillet. Once melted, stir in the minced garlic and cook for 1 minute, until fragrant.

Step 6

Pour in the chicken broth and wine, scraping up any browned bits from the bottom of the skillet. Bring the liquid to a simmer.

Step 7

Stir in the lemon juice, capers, parsley, and thyme. Let the sauce simmer for 2-3 minutes until slightly reduced.

Step 8

Return the chicken to the skillet, spooning some of the sauce over the top. Simmer for 2 more minutes to reheat the chicken and allow it to absorb some of the flavors.

Step 9

Serve the chicken topped with the sauce and garnished with lemon slices. Pair with pasta, rice, or a crisp green salad.
