Ingredients

  • 4 pieces Chicken breasts
  • 4 cups Broccoli florets
  • 2 tablespoons Olive oil
  • 3 cloves Garlic cloves
  • 1 teaspoon Fresh rosemary
  • 1 teaspoon Fresh thyme
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Butter
  • 0.5 cup Chicken broth
  • 1 tablespoon Lemon juice

Directions

Step 1

Pat the chicken breasts dry with paper towels and season both sides with salt and black pepper.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chicken breasts and sear for 4-5 minutes on each side, or until golden brown. Remove the chicken and set it aside on a plate.

Step 3

While the chicken cooks, finely mince the garlic cloves and chop the fresh rosemary and thyme.

Step 4

In the same skillet, add the remaining 1 tablespoon of olive oil and 1 tablespoon of butter. Allow the butter to melt completely.

Step 5

Add the minced garlic to the skillet and sauté for 1 minute, stirring constantly to avoid burning.

Step 6

Stir in the fresh rosemary, thyme, and chicken broth. Bring the mixture to a simmer and scrape the bottom of the skillet to deglaze it.

Return the chicken breasts to the skillet and reduce the heat to low. Cover and cook for 10-12 minutes, or until the chicken is fully cooked and reaches an internal temperature of 165°F (74°C).

Step 8

While the chicken simmers, steam the broccoli florets. In a medium saucepan, add about 1 inch of water, bring it to a boil, and place a steamer basket with the broccoli over it. Cover and steam for 4-5 minutes until tender but still crisp.

Step 9

Once the chicken is cooked, squeeze the lemon juice over the chicken in the skillet and stir gently to combine.

Step 10

Serve the herbed chicken hot with the steamed broccoli on the side. Optionally, drizzle some of the skillet sauce over the broccoli for added flavor.
