Ingredients

  • 1 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 0.5 cup Grated Parmesan cheese
  • 0.5 cup Grated sharp cheddar cheese
  • 0.5 cup Unsalted butter (melted and slightly cooled)
  • 0.25 cup Whole milk
  • 3 large Eggs
  • 2 tablespoons Chopped fresh parsley
  • 2 tablespoons Chopped fresh chives
  • 1 tablespoon Chopped fresh thyme
  • 0.25 teaspoon Freshly ground black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a standard madeleine pan with butter, ensuring all the grooves are coated.

Step 2

In a medium-sized mixing bowl, sift together the all-purpose flour, baking powder, and salt. Stir in the grated Parmesan and cheddar cheese and mix until evenly combined.

Step 3

In a separate bowl, whisk together the melted butter, milk, and eggs until smooth and frothy.

Step 4

Slowly pour the wet mixture into the dry ingredients and gently stir until just combined. Be careful not to overmix, as this could make the madeleines tough.

Step 5

Fold in the chopped parsley, chives, thyme, and freshly ground black pepper to evenly distribute the herbs throughout the batter.

Step 6

Spoon about one tablespoon of batter into each cavity of the madeleine pan, filling it about two-thirds full. Smooth the tops gently with the back of a spoon if needed.

Step 7

Bake the madeleines in the preheated oven for 10-12 minutes, or until they are golden brown around the edges and a toothpick inserted into the center comes out clean.

Step 8

Remove the pan from the oven and allow the madeleines to cool for 1-2 minutes before gently loosening them with a butter knife and transferring them to a wire rack to cool completely.

Step 9

Serve warm or at room temperature. These madeleines are best enjoyed the same day but can be stored in an airtight container for up to 2 days.
