Ingredients

  • 4 pieces Tilapia fillets
  • 1 cup Panko breadcrumbs
  • 0.33 cup Parmesan cheese, grated
  • 2 tablespoons Fresh parsley, chopped
  • 1 teaspoon Dried oregano
  • 1 teaspoon Garlic powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 large Eggs
  • 0.5 cup All-purpose flour
  • 2 tablespoons Olive oil
  • 1 14-ounce can Canned crushed tomatoes
  • 0.5 cup Red onion, finely diced
  • 2 cloves Garlic cloves, minced
  • 5 pieces Fresh basil leaves, torn
  • 1 teaspoon Sugar
  • 0.5 teaspoon Salt (for sauce)
  • 0.25 teaspoon Black pepper (for sauce)

Directions

Step 1

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

Step 2

In a shallow bowl, combine the panko breadcrumbs, grated Parmesan cheese, chopped parsley, dried oregano, garlic powder, salt, and black pepper. Mix well.

Step 3

In a separate shallow bowl, whisk the eggs. In another bowl, place the flour.

Step 4

Dip each tilapia fillet into the flour, ensuring it is evenly coated. Next, dip it into the beaten egg, then press it into the breadcrumb mixture, coating both sides completely. Repeat with the remaining fillets.

Step 5

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Sear the fillets for 2–3 minutes on each side until golden brown. Transfer the fillets to the prepared baking sheet and bake for 8–10 minutes, or until the fish is fully cooked and flakes easily with a fork.

Step 6

While the fish is baking, make the quick tomato sauce. In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the diced red onion and cook for 3–4 minutes until softened.

Step 7

Stir in the minced garlic and cook for 30 seconds until fragrant. Add the canned crushed tomatoes, torn basil leaves, sugar, salt, and black pepper.

Step 8

Simmer the sauce for 10 minutes, stirring occasionally, until slightly thickened.

Step 9

Taste the sauce and adjust seasoning, if needed.

Step 10

Serve the tilapia fillets over a bed of the quick tomato sauce, garnished with extra fresh parsley or basil if desired. Enjoy!
