Ingredients

  • 4 pieces Sole fillets
  • 2 tablespoons Fresh parsley, finely chopped

  • 0.5 cup All-purpose flour
  • 2 large Eggs
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper, freshly ground
  • 4 tablespoons Olive oil
  • 2 tablespoons Butter
  • 1 cup Chicken stock
  • 0.5 cup Heavy cream
  • 1 tablespoon Lemon juice

Directions

Step 1

Prepare the crust mixture by combining the breadcrumbs, parsley, thyme, basil, Parmesan cheese, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper in a shallow dish. Mix well.

Step 2

In a separate shallow dish, place the flour. In another shallow dish, whisk the eggs with 1 tablespoon of water.

Step 3

Pat the sole fillets dry with paper towels. Lightly season them with a pinch of salt and pepper on both sides.

Dredge each sole fillet in the flour, shaking off the excess. Dip it into the egg mixture and then press it into the herb-breadcrumb mixture, ensuring an even coating on both sides.
