  • 1 medium Cucumber, thinly sliced
  • 0.25 cup Red onion, thinly sliced
  • 2 tablespoons Balsamic vinegar
  • 1 teaspoon Honey
  • 1 teaspoon Dijon mustard
  • 3 tablespoons Extra virgin olive oil
  • 0.25 teaspoons Salt (for dressing)
  • 0.125 teaspoons Black pepper (for dressing)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a small bowl, combine the panko breadcrumbs, chopped parsley, chopped dill, Parmesan cheese, garlic powder, salt, and black pepper.

Step 3

Drizzle the olive oil over the breadcrumb mixture and mix until evenly combined.

Step 4

Pat the salmon fillets dry with paper towels and place them skin-side down on the prepared baking sheet.

Step 5

Press the herb breadcrumb mixture onto the top of each salmon fillet, covering the surface evenly.

Step 6

Bake the salmon in the preheated oven for 12-15 minutes or until the salmon is cooked through and the breadcrumb topping is golden brown.

Step 7

While the salmon is baking, prepare the salad by combining the mixed greens, cherry tomatoes, cucumber slices, and red onion in a large salad bowl.

Step 8

In a small jar or bowl, whisk together the balsamic vinegar, honey, Dijon mustard, extra virgin olive oil, salt, and black pepper to make the dressing.

Step 9

Drizzle the dressing over the salad and toss until the greens are evenly coated.

Step 10

Once the salmon is cooked, remove it from the oven and let it rest for 2 minutes.

Step 11

Serve each piece of salmon alongside a generous helping of the mixed greens salad. Enjoy!
