Ingredients

  • 4 pieces white fish fillets (cod, halibut, or tilapia)
  • 3 tablespoons fresh parsley
  • 2 tablespoons fresh dill
  • 1 tablespoon fresh thyme leaves
  • 1 cup panko breadcrumbs
  • 0.25 cup grated Parmesan cheese
  • 1 teaspoon lemon zest
  • 1 clove garlic, minced
  • 3 tablespoons unsalted butter, melted
  • 2 tablespoons olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 4 pieces lemon wedges (for serving)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.

Step 2

Pat the fish fillets dry with paper towels, then season them with salt and black pepper on both sides. Set aside.

Step 3

In a medium bowl, combine the parsley, dill, thyme, panko breadcrumbs, Parmesan cheese, lemon zest, minced garlic, and melted butter. Mix thoroughly until the mixture resembles damp sand.

Step 4

Drizzle olive oil evenly over the fish fillets, then press the herb-breadcrumb mixture onto the top side of each fillet, forming an even crust.

Step 5

Carefully transfer the fish fillets to the prepared baking sheet crust-side up.

Step 6

Bake the fish in the preheated oven for 12-15 minutes, or until the crust is golden brown and the fish flakes easily with a fork.

Step 7

Remove the fish from the oven and let it rest for 2 minutes.

Step 8

Serve hot with lemon wedges on the side for squeezing over the fish before eating.
