  • 0.25 cup chicken broth
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup grape tomatoes
  • 2 cups baby spinach

Directions

Step 1

Place the chicken breasts between two sheets of plastic wrap and pound them gently with a meat mallet until they are an even thickness (about 1 inch thick).

In a small bowl, combine 2 tablespoons of olive oil, rosemary, thyme, parsley, minced garlic, salt, and black pepper. Rub this mixture evenly over the chicken breasts.
