Ingredients

  • 6 pieces Chicken thighs (bone-in, skin-on)
  • 1.5 teaspoons Salt
  • 1 teaspoons Black pepper
  • 2 tablespoons Olive oil
  • 1 medium Onion, finely diced
  • 4 cloves Garlic cloves, minced
  • 2 cups Mushrooms, sliced
  • 1.5 cups Cherry tomatoes, halved
  • 1 cup Chicken broth
  • 0.5 cup Dry white wine (optional)
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Dried thyme
  • 2 tablespoons Fresh parsley, chopped (for garnish)

Directions

Step 1

Season the chicken thighs with 1 teaspoon of salt and 1 teaspoon of black pepper on both sides.

Step 2

Heat 2 tablespoons of olive oil in a large, deep skillet or Dutch oven over medium-high heat.

Step 3

Add the chicken thighs to the skillet, skin-side down, and sear for 4-5 minutes until the skin is golden brown. Flip the chicken and sear the other side for another 3-4 minutes. Remove the chicken from the pan and set aside.
