Ingredients

  • 4 large ripe tomatoes
  • 2 tablespoons olive oil
  • 2 minced garlic cloves
  • 10 chopped fresh basil leaves
  • 1 teaspoon dried oregano
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 0.5 cup grated Parmesan cheese
  • 0.5 cup panko breadcrumbs
  • 2 tablespoons, chopped fresh parsley

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a baking dish with olive oil.

Step 2

Slice the tops off the tomatoes and scoop out a small portion of the seeds and core to create a hollow space for the filling.

Step 3

In a small skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant.

Step 4

In a medium bowl, combine the sautéed garlic, chopped basil, dried oregano, salt, black pepper, grated Parmesan cheese, and panko breadcrumbs. Mix well until all ingredients are evenly incorporated.

Step 5

Stuff each tomato cavity with the breadcrumb mixture, pressing down slightly to ensure it’s well-packed.

Step 6

Drizzle the remaining tablespoon of olive oil evenly over the top of the stuffed tomatoes.

Step 7

Place the tomatoes in the prepared baking dish and bake in the preheated oven for 20-25 minutes or until the tops are golden brown and the tomatoes are tender.

Step 8

Remove from the oven, garnish with chopped fresh parsley, and let cool for a few minutes before serving.
