Ingredients

  • 2 racks rack of lamb
  • 3 tablespoons olive oil
  • 2 tablespoons fresh rosemary
  • 2 tablespoons fresh thyme
  • 4 garlic cloves
  • 3 tablespoons Dijon mustard
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup panko breadcrumbs
  • 1 cup Parmesan cheese

Directions

Step 1

Preheat your oven to 425°F (220°C).

Step 2

Take the racks of lamb out of the refrigerator and allow them to come to room temperature for about 30 minutes.

Step 3

In a small food processor, blend together the rosemary, thyme, garlic, olive oil, salt, and black pepper into a paste.

Step 4

Rub the herb mixture evenly over the lamb racks, ensuring it's well coated.

Step 5

In a separate bowl, mix the panko breadcrumbs and grated Parmesan cheese.

Step 6

Brush the Dijon mustard over the herb-coated lamb racks.

Step 7

Press the breadcrumb-parmesan mixture evenly over the mustard-coated lamb, creating an even crust.

Step 8

Place the racks on a baking sheet lined with foil or parchment paper, bone side down.

Step 9

Roast in the preheated oven for about 20-25 minutes, or until the internal temperature reaches 135°F (57°C) for medium-rare.

Step 10

Remove the lamb from the oven and cover it loosely with aluminum foil. Let it rest for about 10 minutes to redistribute the juices.

Step 11

Carve the lamb into individual chops and serve immediately.
