  • 2 fish fresh trout (whole, cleaned and gutted)
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 2 tablespoons fresh parsley (chopped)
  • 1 teaspoon fresh thyme leaves
  • 1 whole lemon (zested and juiced)
  • 2 cloves garlic (minced)
  • 0.5 cup all-purpose flour
  • 1.5 teaspoons kosher salt
  • 1 teaspoon black pepper (freshly ground)
  • 0.25 cup almonds (sliced, toasted)
  • 1 cup watercress (for garnish)

Directions

Step 1

Rinse the fresh trout inside and out under cold running water, then pat dry with paper towels. Season the fish inside and out with 1 teaspoon of kosher salt and 0.5 teaspoon of black pepper.

Step 2

In a shallow dish, combine the flour, remaining 0.5 teaspoon of kosher salt, and 0.5 teaspoon of black pepper. Lightly dredge the trout in the seasoned flour, shaking off any excess.

Step 3

Heat a large skillet over medium heat and add 2 tablespoons of unsalted butter and the olive oil. Once the butter melts and begins to foam, place the trout in the skillet. Cook for 4-5 minutes on each side, or until the skin is golden brown and the fish is cooked through. Transfer the trout to a serving platter and keep warm.

Step 4

Reduce the skillet heat to low and add the remaining 2 tablespoons of butter to the pan. Once melted, stir in the minced garlic and cook for 30 seconds, until fragrant.
