Ingredients

  • 4 medium beets
  • 2 tablespoons brown sugar
  • 2 tablespoons soy sauce
  • 2 tablespoons apple cider vinegar
  • 1 cup water
  • 1 teaspoon sesame oil
  • 2 cloves garlic cloves, minced
  • 1 teaspoon fresh ginger, grated
  • 1 teaspoon sesame seeds
  • 2 stalks scallions, thinly sliced

Directions

Step 1

Wash the beets thoroughly and trim off the greens, leaving about 1 inch of the stems attached. Do not peel the beets at this point.

Step 2

Place the beets in a large pot and cover them with water. Bring the water to a boil, then reduce the heat and simmer for about 30-35 minutes, or until the beets are tender when pierced with a fork.

Step 3

Drain the beets and let them cool slightly. Once they are cool enough to handle, peel off the skins by rubbing them gently with your hands or a paper towel. Slice the peeled beets into thin wedges and set aside.

Step 4

In a small saucepan over medium heat, combine the brown sugar, soy sauce, apple cider vinegar, water, sesame oil, minced garlic, and grated ginger. Stir well and bring the mixture to a gentle boil.

Step 5

Reduce the heat and let the sauce simmer for about 5 minutes, allowing the flavors to meld together.

Step 6

Add the sliced beets to the saucepan, stirring to coat them evenly in the sauce. Simmer for an additional 5 minutes, ensuring the beets are well-coated and heated through.

Step 7

Transfer the beets to a serving bowl and sprinkle with sesame seeds and sliced scallions for garnish.

Step 8

Serve warm or at room temperature as a side dish or salad topping. Enjoy!
