  • 1 pint Cherry tomatoes
  • 1 large Cucumber
  • 1 medium Red bell pepper

  • 0.5 cup Kalamata olives
  • 0.75 cup Feta cheese, crumbled
  • 0.25 cup Extra-virgin olive oil
  • 2 tablespoons Red wine vinegar
  • 1 tablespoon Fresh lemon juice
  • 1 teaspoon Honey
  • 1 clove Garlic, minced
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground black pepper
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Wash all the vegetables thoroughly and pat dry.

Halve the cherry tomatoes and add them to a large mixing bowl.

Peel the cucumber, if preferred, and dice it into bite-sized pieces. Add to the bowl.

Remove the seeds and core from the red bell pepper, dice it into small pieces, and toss it into the bowl.
