Ingredients

  • 2 lbs Potatoes
  • 1 tsp Salt
  • 1 cup Hellmann's Real Mayonnaise
  • 2 tbsp White vinegar
  • 1 tbsp Sugar
  • 0.25 tsp Ground black pepper
  • 1 cup Celery, chopped
  • 0.5 cup Onion, finely chopped
  • 2 Hard-boiled eggs, chopped
  • 0.5 tsp Paprika (optional, for garnish)

Directions

Step 1

Peel and cut the potatoes into bite-sized chunks. Place them in a large pot and cover with water. Add 1 teaspoon of salt to the water.

Step 2

Bring the water to a boil over medium-high heat, then reduce to a simmer. Cook the potatoes for about 10-15 minutes or until fork-tender.

Step 3

Drain the potatoes and allow them to cool to room temperature before transferring them to a large bowl.

Step 4

In a small bowl, whisk together Hellmann's Real Mayonnaise, white vinegar, sugar, and ground black pepper until smooth and well combined.

Step 5

Pour the mayonnaise mixture over the cooled potatoes. Add the chopped celery, finely chopped onion, and chopped hard-boiled eggs to the bowl with the potatoes.

Step 6

Gently toss all the ingredients together until evenly coated with the dressing. Be careful not to mash the potatoes.

Step 7

Taste and adjust the seasoning with additional salt and pepper if needed.

Step 8

Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to blend.

Step 9

Before serving, sprinkle the top with paprika (if using) for a hint of color.

Step 10

Serve chilled or at room temperature as a delicious side dish for any meal.
