Ingredients

  • 2 pounds Beef tenderloin (fillet)
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 10 ounces Mushrooms (button or cremini)
  • 1 teaspoon Thyme leaves
  • 1 Garlic clove (minced)
  • 1 tablespoon Unsalted butter
  • 8 slices Prosciutto (thinly sliced)
  • 2 tablespoons English mustard
  • 1 Puff pastry sheet
  • 1 Egg (beaten)
  • 2 tablespoons Flour (for dusting)

Directions

Step 1

Season the beef tenderloin with salt and pepper on all sides.

Step 2

Heat olive oil in a large skillet over high heat. Sear the beef for 1-2 minutes on each side until browned. Remove from heat, let it cool, and brush it with English mustard.

Step 3

In a food processor, combine mushrooms, thyme leaves, and garlic. Pulse until finely chopped.

Step 4

Heat butter in a skillet over medium heat. Add the mushroom mixture and cook until all the moisture has evaporated and it forms a thick paste (duxelles). Set aside to cool.

Step 5

On a sheet of plastic wrap, lay down a layer of prosciutto slices, slightly overlapping them to form a rectangle.

Step 6

Spread the cooled mushroom duxelles evenly over the prosciutto.

Step 7

Place the seared beef on top. Using the plastic wrap, tightly roll the prosciutto and mushroom layer around the beef. Twist the ends of the plastic wrap to seal and refrigerate for 20 minutes.

Step 8

Preheat your oven to 400°F (200°C).

Step 9

On a floured surface, roll out the puff pastry large enough to encase the beef. Remove the beef from the plastic wrap and place it in the center of the pastry.

Step 10

Fold the pastry around the beef, trimming any excess, and seal it tightly. Place the seam side down on a baking sheet.

Step 11

Brush the pastry with the beaten egg to ensure a golden crust. Optional: Decorate the pastry with extra pieces of dough and brush again for a professional look.

Step 12

Bake in the preheated oven for 35-40 minutes, or until the pastry is golden and the internal temperature registers 125°F (51°C) for medium-rare.

Step 13

Remove the Wellington from the oven and allow it to rest for 10 minutes before slicing.

Step 14

Serve slices of Beef Wellington warm, paired with your favorite sides such as roasted vegetables or mashed potatoes.
