Ingredients

  • 6 slices thick-cut bacon
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 15-ounce can canned kidney beans, drained and rinsed
  • 1 15-ounce can canned pinto beans, drained and rinsed
  • 1 10-ounce can canned diced tomatoes with green chilies
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground chipotle chili powder
  • 2 tablespoons dark brown sugar
  • 1 tablespoon Dijon mustard
  • 2 tablespoons tomato paste
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon hot sauce (optional, for extra heat)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup water or chicken broth

Directions

Step 1

In a large skillet or Dutch oven over medium heat, cook the bacon until crispy, about 7-10 minutes. Remove the bacon from the skillet and set it aside on paper towels to drain. Once cooled, chop it into bite-sized pieces.

Step 2

Drain the excess bacon grease from the skillet, leaving about 1 tablespoon behind for flavor.

Step 3

In the same skillet, add the diced onion and sauté until softened and translucent, about 5-7 minutes.

Step 4

Stir in the minced garlic and cook for another 1-2 minutes until fragrant.

Step 5

Add the diced tomatoes with green chilies, kidney beans, pinto beans, smoked paprika, chipotle chili powder, dark brown sugar, Dijon mustard, tomato paste, apple cider vinegar, hot sauce (if using), salt, and black pepper.

Step 6

Pour in the water or chicken broth and stir to combine all the ingredients thoroughly.

Step 7

Bring the mixture to a simmer over medium heat, then reduce the heat to low. Cover and let it cook for 30-35 minutes, stirring occasionally, to allow all the flavors to meld.

Step 8

About 5 minutes before serving, stir in the chopped bacon to warm it through.

Step 9

Serve hot, either as a side dish or as a hearty main alongside crusty bread or cornbread. Enjoy the smoky, spicy kick of Hell’s Angels Beans!
