Ingredients

  • 1 lb Ground lamb
  • 1 medium, diced Yellow onion
  • 2 medium, peeled and diced Carrots
  • 1 cup Frozen peas
  • 2 minced Garlic cloves
  • 2 tablespoons Tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 cup Beef or lamb stock
  • 1 teaspoon Dried thyme
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 2 lbs, peeled and quartered Potatoes
  • 0.5 cup Butter
  • 0.5 cup Milk
  • 1 large Egg yolk
  • 0.25 cup, grated (optional) Parmesan cheese
  • 1 tablespoon Olive oil

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Bring a large pot of salted water to a boil. Add the potatoes and cook until fork-tender, about 15-20 minutes.

Step 3

While the potatoes are boiling, heat olive oil in a large skillet over medium heat. Add the onion and carrots, cooking for 5 minutes until softened.

Step 4

Add the garlic and ground lamb to the skillet. Cook until the lamb is browned, breaking up the meat as it cooks.

Stir in tomato paste, Worcestershire sauce, dried thyme, salt, and black pepper. Mix well.
