Ingredients

  • 2 cups pitted dates
  • 1 cup almonds
  • 1 cup shredded coconut
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon sea salt
  • 2 tablespoons cocoa powder (optional)
  • 2 tablespoons water

Directions

Step 1

Place the pitted dates in a food processor and blend until they form a sticky, chunky paste.

Step 2

Add the almonds to the food processor and pulse until they are finely chopped and well combined with the dates.

Step 3

Add the shredded coconut, vanilla extract, sea salt, and cocoa powder (if using). Pulse until everything is mixed into a cohesive mixture. The mixture should hold together when pressed between your fingers.

Step 4

If the mixture feels too dry or crumbly, add water one tablespoon at a time and pulse until the desired consistency is reached.

Step 5

Scoop out approximately one tablespoon of the mixture and roll it between your palms to form a ball. Repeat with the remaining mixture.

Step 6

Roll the balls in additional shredded coconut or cocoa powder for extra flavor and texture, if desired.

Step 7

Place the date balls on a parchment-lined tray and refrigerate for at least 30 minutes to firm up.

Step 8

Store the date balls in an airtight container in the refrigerator for up to two weeks or in the freezer for up to three months.
