Ingredients

  • 1 pound Shrimp (peeled and deveined)
  • 4 tablespoons Butter
  • 1 medium Yellow onion (finely chopped)
  • 1 stalk Celery (diced)
  • 2 cloves Garlic (minced)
  • 3 tablespoons Flour
  • 1 cup Heavy cream
  • 1 cup Seafood or chicken stock
  • 1 teaspoon Old Bay seasoning
  • 2 tablespoons Parsley (chopped)
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 package Pie crust (store-bought or homemade)
  • 1 unit Egg (beaten, for egg wash)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large skillet, melt the butter over medium heat. Add the chopped onion and celery, and sauté until softened, about 5 minutes.

Step 3

Add the minced garlic and cook for another 1 minute until fragrant.

Step 4

Sprinkle the flour over the vegetables and stir to combine. Cook for 2 minutes to remove the raw flour taste.

Step 5

Gradually whisk in the heavy cream and seafood or chicken stock, ensuring there are no lumps.

Step 6

Stir in the Old Bay seasoning, salt, black pepper, and parsley. Let the mixture simmer until thickened, about 3-4 minutes.

Step 7

Add the shrimp to the skillet and cook until just pink and opaque, approximately 3 minutes. Remove from heat and let the mixture cool slightly.

Step 8

Roll out one half of the pie crust and place it in the bottom of a pie dish, pressing it gently against the sides.

Step 9

Spoon the shrimp mixture into the prepared crust, spreading it evenly.

Step 10

Roll out the second half of the pie crust and lay it over the filling. Trim any excess crust and crimp the edges to seal.

Step 11

Cut a few small slits in the top crust to allow steam to escape. Brush the crust with the beaten egg for a golden finish.

Step 12

Bake the pie in the preheated oven for 35-40 minutes, or until the crust is golden brown.

Step 13

Let the pie cool for 10 minutes before slicing and serving.
