Ingredients

  • 2 pounds pork shoulder
  • 1 teaspoon salt
  • 0.5 teaspoons ground black pepper
  • 2 tablespoons vegetable oil
  • 2 large yellow onion
  • 4 cloves garlic cloves
  • 2 tablespoons sweet Hungarian paprika
  • 2 tablespoons tomato paste
  • 1 teaspoon caraway seeds
  • 1 large red bell pepper
  • 2 medium carrots
  • 3 medium potatoes
  • 4 cups beef or vegetable broth
  • 0.5 cup sour cream (optional, for serving)
  • 2 tablespoons chopped fresh parsley (optional, for garnish)

Directions

Step 1

Trim excess fat from the pork shoulder and cut it into bite-sized cubes. Season the pork with 1 teaspoon of salt and 1/2 teaspoon of black pepper.

Step 2

Heat the vegetable oil in a large heavy-bottomed pot or Dutch oven over medium-high heat. Brown the pork in batches to avoid overcrowding, about 3–4 minutes per side. Remove the browned pork from the pot and set aside.

Step 3

Peel and finely chop the onions. Mince the garlic cloves. Add both to the pot, reduce the heat to medium, and sauté until the onions are soft and translucent, about 5–7 minutes.

Step 4

Stir in the sweet Hungarian paprika, tomato paste, and caraway seeds. Cook for 1–2 minutes to toast the spices and develop their flavors.

Step 5

Deseed and chop the red bell pepper. Peel and slice the carrots into rounds. Add them to the pot and stir well.

Step 6

Return the browned pork and any accumulated juices to the pot. Pour in the beef or vegetable broth, ensuring the pork is fully submerged. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 60 minutes.

Step 7

Peel and chop the potatoes into bite-sized chunks. Add the potatoes to the pot and stir. Continue to simmer uncovered for another 20–30 minutes, or until the potatoes are tender and the stew has thickened slightly.

Step 8

Taste the gulyás and adjust the seasoning with additional salt and pepper if necessary.

Step 9

Serve the pork gulyás hot, optionally topping each bowl with a dollop of sour cream and a sprinkle of fresh parsley for garnish. Enjoy with crusty bread or dumplings to complete the meal.
