Ingredients

  • 16 oz Spätzle (homemade or store-bought)
  • 4 tbsp Unsalted butter
  • 1 large Yellow onion, thinly sliced
  • 2 cloves Garlic, minced
  • 1 cup Heavy cream
  • 0.5 cup Milk
  • 1.5 cups Gruyère cheese, shredded
  • 0.5 cups Parmesan cheese, grated
  • 1 tsp Dijon mustard
  • 0.25 tsp Nutmeg, freshly grated
  • 1 tsp Salt
  • 0.5 tsp Black pepper, freshly ground
  • 2 tbsp Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with butter or non-stick cooking spray.

Step 2

If using homemade spätzle, prepare it according to your recipe and set aside. If using store-bought, cook according to the package instructions, drain, and set aside.

Step 3

In a large skillet, melt 2 tablespoons of butter over medium heat. Add the sliced onion and cook, stirring occasionally, for 10–15 minutes until the onions are soft and golden brown. Add the minced garlic and cook for an additional minute. Remove from heat and set aside.

Step 4

In a medium saucepan, melt the remaining 2 tablespoons of butter over medium heat. Stir in the heavy cream, milk, Dijon mustard, salt, black pepper, and nutmeg. Heat the mixture until it is just simmering (do not let it boil).

Step 5

Remove the saucepan from the heat and stir in 1 cup of shredded Gruyère cheese and 1/4 cup of grated Parmesan cheese until melted and smooth.

Step 6

In a large mixing bowl, combine the cooked spätzle, caramelized onions, and the cheese sauce. Mix gently until everything is evenly coated.

Step 7

Transfer the mixture to the prepared baking dish and spread it out evenly. Sprinkle the remaining shredded Gruyère and grated Parmesan over the top.

Step 8

Bake in the preheated oven for 20–25 minutes, or until the casserole is bubbly and the top is golden brown.

Step 9

Remove from the oven and let the casserole rest for 5 minutes before serving. Garnish with fresh parsley, if desired.
