Ingredients

  • 4 cups Heirloom pumpkin (peeled, seeded, and cubed)
  • 2 tablespoons Olive oil
  • 1 medium Yellow onion (diced)
  • 2 cloves Garlic (minced)
  • 1 medium Carrot (peeled and diced)
  • 4 cups Vegetable stock
  • 1 cup Heavy cream
  • 0.25 teaspoons Ground cinnamon
  • 1 pinch Nutmeg
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Unsalted butter
  • 8 scallops Fresh Alaskan sea scallops (cleaned and patted dry)
  • 2 tablespoons Fresh parsley (chopped for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Toss the cubed heirloom pumpkin with 1 tablespoon of olive oil and spread it evenly on a baking sheet. Roast in the preheated oven for 25-30 minutes, until the pumpkin is tender and slightly caramelized.

Step 3

In a large pot, heat the remaining 1 tablespoon of olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes, until translucent.

Add the minced garlic and diced carrot to the pot and cook for another 3 minutes, stirring occasionally.
